Celery seed oleoresin is extracted from the rip seeds of Apium Graveolens Linn (cultivated plants) by steam extraction method. The oil thus, obtained is volatile in nature, soluble in oil and insoluble in water, and has as strong aromatic flavor that has sedanolides and d-limonene, mainly responsible for specific flavor.
